Puzzle Skewers

It’s that time of year again – time to dust off the grill and get the whole family outside and cooking. What better way to celebrate the warmer weather than popping some delicious skewers onto the barbie. The vibrant colors of spring’s bounty at our local farmers market enticed us to create veggie skewers fit for kids! Skewers are a great way to prepare and present veggies. Your children will be excited to eat these puzzle veggie skewers and may just ask for seconds! An added bonus – your kids can help you in the kitchen to make the puzzle-shaped veggies!

Ingredients: Makes 2-3 skewers

  • 2 Wooden or metal skewers
  • 10 cherry tomatoes
  • 1 yellow summer squash
  • 1 carrot
  • 3 tablespoons of olive oil
  • pinch of salt and pepper

  1. If using wooden skewers, soak them in water for 20-30 minutes
  2. Preheat grill to medium heat
  3. Chop summer squash into bite sized puzzles using the YummyShapes food chopper
  4. Cut carrots into 1/2-inch slices
  5. Place all veggies in the bowl, add the olive oil and salt and pepper and toss to combine. Thread veggies onto the skewer
  6. Place veggies on the grill and cook turning often for about 10 minutes. To cook to your child’s food texture preference you may want to reduce or increase cooking times; Reduce cooking time for kids that like their veggies crunchy, or increase cooking time for kids that like there veggies on the softer side
  7. Serve and enjoy
